Drum drying is a method to make dried flakes or powder from viscous liquid by applying a thin layer of liquid to the hot rolling drum surface to instantly dry it, and scraping it out of the drum. These scraped flakes can be then ground into powder.
The drum dried powder is soluble like the spray dried powder with fiber retained. Thus, drum drying is a suitable method for making healthy food and supplement that should retain texture and fiber after defrosting. This technology is also used to make fruit, vegetable and seasoning powder products, e.g. cereal beverages and whole-grain cereals.
